Au Gratin Potatoes
- 2 lb. potatoes (6 medium)
- 1 medium onion, chopped
- 1/4 c. margarine or butter
- 1 Tbsp. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. milk
- 3 c. shredded natural sharp Cheddar cheese
- 1/4 c. fine dry bread crumbs
- paprika
- Clean potatoes and cut into thin slices to make about 4 cups. Cook and stir onion in margarine in 2-quart saucepan until tender.
- Stir in flour, salt and pepper.
- Cook over low heat, stirring constantly, until mixture is bubbly.
- Remove from heat. Stir in milk and 2 1/2 cups cheese.
- Heat to boiling, stirring constantly.
- Boil and stir for 1 minute.
- Place potatoes in ungreased 1 1/2-quart casserole.
- Pour cheese sauce on potatoes. Bake, uncovered, in 375u0b0 oven for 1 hour.
- Mix remaining cheese and bread crumbs.
- Sprinkle over potatoes.
- Sprinkle with paprika. Bake until top is brown and bubbly, 15 to 20 minutes longer. Makes 6 servings.
