Crisp Stuffed Jalapenos

  1. Slit down 1 side of each pepper; remove seeds.
  2. Do not remove top and stem of pepper.
  3. Stuff jalapenos with 1 shrimp or 1 almond and some cheese.
  4. You may do them entirely with cheese; coat with flour.
  5. Beat egg whites to soft peaks.
  6. In another bowl, beat yolks and add 1 tablespoon flour, salt and pepper to season.
  7. Fold in egg whites.
  8. Gently combine in heavy skillet; heat 1 inch oil to 350u0b0.
  9. Holding jalapenos by stem, coat in batter.
  10. Drop into hot oil to fry, turning once, to golden brown.
  11. Drain on paper towel; serve hot.
  12. Appetizers for 4 to 6.
