Crisp Stuffed Jalapenos
- 3/4 c. vinegar
- salt
- 12 medium jalapenos
- 12 small cooked shrimp or 12 whole blanched almonds
- 1/2 c. or more shredded Jack or Panela cheese
- all-purpose flour
- 3 eggs, separated
- fresh ground pepper
- oil (for frying)
- Slit down 1 side of each pepper; remove seeds.
- Do not remove top and stem of pepper.
- Stuff jalapenos with 1 shrimp or 1 almond and some cheese.
- You may do them entirely with cheese; coat with flour.
- Beat egg whites to soft peaks.
- In another bowl, beat yolks and add 1 tablespoon flour, salt and pepper to season.
- Fold in egg whites.
- Gently combine in heavy skillet; heat 1 inch oil to 350u0b0.
- Holding jalapenos by stem, coat in batter.
- Drop into hot oil to fry, turning once, to golden brown.
- Drain on paper towel; serve hot.
- Appetizers for 4 to 6.
