Mae Laws Relish
- 3 qt. unpeeled cucumbers, sliced
- 4 c. chopped cabbage
- 1 large diced green pepper
- 2 tsp. mustard seed
- 5 c. white sugar
- 2 c. whole kernel corn and chopped carrots
- 1 qt. chopped onions
- 3 cloves garlic, chopped
- 1/3 c. uniodized salt
- 1/2 tsp. celery seed
- 3 c. white vinegar
- 1/2 tsp. turmeric
- Combine cucumbers, onions, cabbage, garlic, green pepper and salt.
- Cover with ice; let stand for 3 hours.
- Drain.
- Bring mustard seed, celery seed, sugar, vinegar and turmeric to boil; pour over the drained vegetables and return to a boil.
- Add corn and chopped carrots (2 cups total); put into sterilized jars. Process in water bath for 20 minutes.
- Makes 9 pints.
- A great favorite and delicious in egg or potato salad.
