Torta Rustica
- 2 tsp. olive oil
- 13 oz. hot Italian turkey sausage, casings removed
- 1 tsp. dried basil
- 1/4 tsp. salt
- 1 c. part-skim Ricotta cheese
- 2 Tbsp. skim milk
- 8 oz. refrigerated pizza dough
- 1/2 c. chopped onion
- 2 1/2 c. blanched broccoli florets
- 1/4 tsp. crushed fennel seed
- 1/2 c. egg substitute
- 1 Tbsp. grated Parmesan cheese
- In large nonstick skillet, heat oil over medium-high heat. Add sausage; cook 6 to 7 minutes, stirring to break into small pieces until browned.
- With slotted spoon, remove sausage from skillet; set aside.
- Add onion to skillet; cook, stirring frequently, for 2 to 3 minutes, or until tender.
- Stir in broccoli, basil, fennel seed and salt.
- Cook for 4 to 5 minutes, or until broccoli is tender.
- Transfer mixture to medium bowl.
- In small bowl, combine Ricotta, egg substitute, milk and Parmesan cheese; set aside.
