Blueberry Lemon Bread
- 1 1/4 c. sugar
- 1/2 c. butter
- 2 eggs
- 1 tsp. salt
- 3/4 c. milk
- 1 1/2 c. blueberries
- grated peel of 1 lemon
- 2 1/4 c. flour
- 2 1/2 tsp. baking powder
- 3 Tbsp. lemon juice
- Preheat oven to 350u0b0.
- Grease a 5 x 9-inch loaf pan.
- Cream 1 cup sugar and butter until fluffy.
- Add eggs and lemon peel; beat well.
- Set aside 2 tablespoons flour; sift remaining flour with baking powder and salt.
- Mix the flour alternately with milk into creamed mixture.
- Beat smooth after each addition.
- Combine reserved flour with blueberries.
- Fold gently into batter.
- Turn into pan and bake 1 hour.
- Cool 10 minutes and pierce gently with a fork.
- Combine lemon juice and 1/4 cup sugar.
- Dissolve and pour over loaf.
- Enjoy!
