Old Fashioned Butterscotch Meringue Pie
- 1 baked pie shell
- 3/4 c. packed brown sugar
- 1/3 c. flour
- 1/2 tsp. salt
- 2 c. skim milk
- 3 egg whites
- 3 Tbsp. margarine
- 1 tsp. vanilla
- 1/4 tsp. maple flavoring
- 1/4 tsp. cream of tartar
- 6 Tbsp. sugar
- 3 egg substitutes
- Combine brown sugar, flour and salt in medium size saucepan; gradually stir in milk.
- Cook over medium heat, stirring constantly, until mixture comes to a boil and is thickened.
- Boil 1 minute; remove from heat.
- Slowly stir into egg substitutes, about 1/2 cup of hot mixture; slowly stir back into remaining mixture in saucepan.
- Cook, stirring constantly, over low heat, 2 minutes.
- Remove from heat.
- Stir in margarine, vanilla and maple flavoring; pour into pie shell.
