Baked Fish
- 2 lb. fillet of sole
- 1/2 c. olive oil
- 1 can tomato slices (16 oz.)
- 3 chopped scallions
- 1 c. chopped parsley
- 1 minced garlic clove
- 2 tsp. oregano
- salt and pepper
- 1 c. water
- butter
- bread crumbs
- lemon slices (optional)
- 2 large onions, sliced in rings (optional)
- 1/2 can sliced black olives (optional)
- Place fish in single layer in greased pan (use olive oil). Sprinkle with salt, pepper and oregano.
- Add 1/2 cup olive oil. Add tomatoes, scallions, parsley and garlic.
- Top with bread crumbs, covering fish completely.
- Dot with butter.
- Add 1 cup water and bake at 350u0b0 for 45 minutes.
- Decorate with onion rings, olives and lemon.
