Apple Cake
- 2 eggs
- 2 cups sugar
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 4 cups diced apples
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- Topping
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 cup water or 1 cup apple juice
- 1 teaspoon vanilla
- 1/4 cup butter
- Beat eggs until fluffy and light.
- Gradually add sugar, oil and vanilla.
- Sift together flour, nutmeg, cinnamon, salt, and soda.
- Stir in apples.
- Bake at 350 degrees for 45 minutes.
- Make topping: Mix sugars and water in pan bring to boil.
- Boil til clear.
- Add vanilla.
- Finish with butter.
- Pour over warm cake.
