Turkey Cutlets Piccata
- 1 (16 oz.) pkg. fresh turkey cutlets
- 1 large egg
- 1 Tbsp. milk
- 1 to 2 envelopes Weight Watchers chicken bouillon
- 1 to 2 c. bread crumbs (I use Panko Japanese style bread crumbs found in gourmet section)
- 1 medium lemon
- butter, olive oil or margarine (to cook)
- 2 eggs, beaten together
- 12 soda crackers (saltines)
- 1 c. milk
- 1/4 c. melted butter/margarine
- 1 can minced clams, drained
- 1 frozen pie crust (plain, optional)
- 1/4 tsp. Worcestershire
- dash of pepper/salt
- 2 Tbsp. onions (I add more)
- 1 c. peas
- 1 c. spinach
- Have your child crumble up the crackers in a bowl; add the milk and soak for a few minutes.
- Add everything else, eggs last. Pour it all into pie crust or a greased casserole and bake it in a 350u0b0 oven for 45 minutes, uncovered.
