Banana Oatmeal Cookies(Sugar-Free)
- 1 c. Brown Sugar Twin
- 1/2 scant c. butter or butter flavored Crisco
- 1/2 tsp. lemon extract
- 1 tsp. soda
- 2 1/2 c. quick cooking oats
- 1/2 c. chopped walnuts
- 1/2 c. raisins (steam-plumped)
- 2 eggs, beaten
- 1 2/3 c. mashed bananas
- 1 1/2 tsp. vanilla
- 1 c. self-rising flour
- 1 tsp. cinnamon or 1/2 tsp. cinnamon and 1/2 tsp. cloves
- Cream butter with sugar substitute; add eggs, bananas and flavorings.
- Sift flour with dry ingredients.
- Plump raisins and add other ingredients to flour mixture.
- Add flour mixture to egg mixture.
- (If batter does not seem to be thick enough, add more rolled oats, a little at a time.)
- Drop by spoonfuls on nonstick or lightly greased cookie sheet.
- Bake at 400u0b0 for 10 minutes. Makes about 60 cookies, depending on size.
