Carrot Zucchini Bars With Cream Cheese Frosting
- 2/3 c. packed light brown sugar
- 1/2 c. butter (at room temperature)
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2/3 c. grated carrots
- 2/3 c. grated zucchini, liquid squeezed out
- 1/2 c. raisins
- 1 pkg. (3 oz.) cream cheese
- Cream Cheese Frosting
- Heat oven to 350u0b0; grease 9 x 9-inch baking dish.
- Beat together brown sugar, butter and cream cheese in large bowl until fluffy.
- Beat in egg and vanilla.
- Beat in flour, baking powder and salt until well blended.
- Stir in carrots, zucchini and raisins; spoon into pan.
- Bake 30 minutes; cool for 10 minutes. Invert cake and cool completely.
- Frost, cut into squares.
