Baked Cod With Aloutte Cheese
- 1 tablespoon olive oil
- 1 lb cod fish fillet (cut into 2 pieces)
- 4 tablespoons alouette garlic & herb spreadable cheese
- 3/4 cup fire roasted diced tomato, bell peppers, onions and garlic (drained)
- 1 tablespoon parsley (dried)
- 1/2 teaspoon italian seasoning (dried)
- 2 tablespoons parmesan cheese (grated or shredded)
- butter-flavored cooking spray
- salt and pepper
- Preheat oven to 400 degrees.
- Pour oil into baking dish, coat the bottom of the pan; arrange the cod fillets in the dish, pat dry with paper towel.
- Spread fillets with Alouette cheese spread; 1 tablespoon on each fillet, top with drained tomatoes, parsley, parmesan cheese, Italian seasoning then spray with butter flavored spray.
- Bake uncovered in preheated oven for 25 minutes.
