Low-Fat Chicken Delight

  1. Combine cheese and mayonnaise, beating until smooth.
  2. Add onion, pickle juice, celery, curry powder, salt, pepper, pimento, hot sauce and garlic powder; mix well.
  3. Stir in chicken and 2 tablespoons broth.
  4. Coat a 2-cup mold with nonstick cooking spray. Pour chicken mixture into prepared mold and chill.
  5. Unmold onto serving plate; serve with Melba toast and raw vegetables.
  6. Makes 2 cups.
