Low-Fat Chicken Delight
- 1 1/2 lb. cooked chicken breasts, chopped
- 1/4 (8 oz.) pkg. Neufchatel cheese, softened
- 1 Tbsp. reduced calorie mayonnaise
- 1 Tbsp. grated onion
- 1 Tbsp. sweet pickle juice
- 1/2 c. finely chopped celery
- dash of curry powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 Tbsp. chopped pimento
- dash of each: hot sauce and garlic powder
- 2 Tbsp. chicken broth
- Combine cheese and mayonnaise, beating until smooth.
- Add onion, pickle juice, celery, curry powder, salt, pepper, pimento, hot sauce and garlic powder; mix well.
- Stir in chicken and 2 tablespoons broth.
- Coat a 2-cup mold with nonstick cooking spray. Pour chicken mixture into prepared mold and chill.
- Unmold onto serving plate; serve with Melba toast and raw vegetables.
- Makes 2 cups.
