Taco Casserole
- 2 lb. ground beef
- 1 chopped onion
- 2 pkg. taco seasoning mix
- salt and pepper
- 2 c. water
- 1 small can chopped black olives (optional)
- 1 pkg. flour tortilla shells
- 1 small can whole kernel corn, drained
- 1/2 (8 oz.) pkg. Monterey Jack cheese (with jalapeno peppers), grated
- 1 (10 oz.) pkg. Cracker Barrel cheese, grated
- Brown meat with salt, pepper and onion.
- Drain.
- Add taco mix and 2 cups water.
- Cook on medium heat until mixture is hot.
- Let simmer on very low heat, stirring occasionally, until mixture is thick.
- Add drained corn and olives (if desired); heat.
- Grate each kind of cheese separately.
- Spray baking dish with vegetable spray. Fill each separated shell with small amount of pepper, cheese and meat.
- Roll shells and lay in dish (side by side) and pour rest of meat sauce over rolled shells.
- Cover the tops of shells with grated cheese (Cracker Barrel).
- Bake at 400u0b0 for 5 to 10 minutes or until cheese is melted.
