Peanut Pie(Mary'S New Mexico)
- 1/2 c. sugar
- 1/4 c. packed brown sugar
- 1/4 c. flour
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 3 c. milk
- 1/2 c. Reese's peanut butter chips
- 4 egg yolks
- 3 Tbsp. butter
- 1 1/2 tsp. vanilla
- 1 (7 1/4 oz.) bag Brach's chocolate covered peanuts
- 1 (9-inch) baked and cooled pastry shell
- Place in saucepan

- seven ingredients.
- Over medium heat cook, stirring constantly, until thick and bubbly. Lower heat and cook two minutes more.
- Remove from heat.
- Stir one cup hot mixture
- into
- slightly
- beaten
- yolks.
- Return to heat.
- Bring to a gentle boil and continue to cook two minutes more,
- stirring constantly.
- Remove
- from
- heat
- and
- stir
- in butter and vanilla. Pour into pastry shell.
- Sprinkle chopped chocolate covered peanuts on
- top, while filling is still hot. If preferred you may want to
- add a meringue top at this time. Cool completely, then store in refrigerator.
