Peanut Pie(Mary'S New Mexico)

  1. Place in saucepan
  2. the
  3. first
  4. seven ingredients.
  5. Over medium heat cook, stirring constantly, until thick and bubbly. Lower heat and cook two minutes more.
  6. Remove from heat.
  7. Stir one cup hot mixture
  8. into
  9. slightly
  10. beaten
  11. yolks.
  12. Return to heat.
  13. Bring to a gentle boil and continue to cook two minutes more,
  14. stirring constantly.
  15. Remove
  16. from
  17. heat
  18. and
  19. stir
  20. in butter and vanilla. Pour into pastry shell.
  21. Sprinkle chopped chocolate covered peanuts on
  22. top, while filling is still hot. If preferred you may want to
  23. add a meringue top at this time. Cool completely, then store in refrigerator.
