Lumpia Fried(Phillippine Egg Roll)
- 3 Tbsp. vegetable oil
- 3 Tbsp. sliced onions
- 1/2 c. shelled shrimp, sliced fine (approximately 1/4 lb.)
- 1 tsp. salt
- 1/2 lb. green beans, thinly sliced diagonally
- 2 c. shredded cabbage
- 1 large sweet potato or yam, coarsely grated
- 2 Tbsp. soy sauce
- 3 Tbsp. chunk style peanut butter, if desired
- 12 egg roll wrappers or wonton wrappers (6-inch squares)
- vegetable oil for frying (3/4-inch deep)
- 2 garlic cloves
- 1 c. pork, sliced fine (1/4 lb.)
- 1/8 tsp. pepper
- 1 tsp. m.s.g.
- In 3 tablespoons hot oil, brown garlic.
- Add onions, then pork.
- Cook 5 minutes on high heat, then add shrimp.
- Reduce heat, season with salt and pepper.
- Cook for 5 minutes.
- Stir in green beans, cook for 1 minute, then add cabbage, sweet potato, soy sauce and m.s.g.
- Stir and cook for 2 minutes.
- Cool.
