Southwest Skillet
- 1 lb ground beef
- 3/4 cup chopped onion
- 1 (16 ounce) can kidney beans, rinsed and drained
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1/2 cup uncooked instant rice
- 1/2 cup water
- 3 tablespoons chopped green bell peppers
- 2 teaspoons chili powder
- 1/2 teaspoon garlic salt
- 1/2 teaspoon salt
- 1 cup corn chips
- 1 1/2 cups shredded cheddar cheese
- In a skillet, cook beef and onion until meat is browned; drain.
- Add next 8 ingredients; mix well.
- Bring to a boil.
- Reduce heat; cover and simmer for 20 minutes, stirring occasionally.
- Remove from the heat.
- Sprinkle with the corn chips and cheese.
- Cover and let stand for 3 minutes or until cheese is melted.
