World'S Best Oatmeal Cookies
- 3 eggs, well beaten
- 1 c. dark raisins
- 1 tsp. vanilla
- 1 c. shortening or oleo
- 1 c. brown sugar
- 1 c. granulated sugar
- 1 tsp. salt
- 2 tsp. soda
- 1 tsp. cinnamon
- 2 c. regular dry oatmeal
- 1 c. nut meats, chopped
- 2 1/2 c. flour
- Combine eggs, raisins and vanilla and let stand at least 2 hours or overnight.
- When ready to make cookies, cream together shortening, brown sugar and white sugar.
- Sift salt, soda, cinnamon and flour.
- Stir flour mixture into sugar-shortening mixture and blend well.
- Beat egg-raisin mixture into mixture. Add oatmeal and chopped nuts.
- Dough will be stiff.
- Chill dough for a better shaped cookie.
- Drop dough by spoonful on cool ungreased cookie sheet.
- Bake at 325u0b0 for approximately 10 to 12 minutes.
- Do not overbake.
- This is a chewy cookie.
