Scorcher
- 1 tsp. ground cumin
- 1 tsp. oregano
- 1/2 c. olive oil
- 1 tsp. red pepper
- 10 cloves garlic, minced
- 1 Tbsp. sugar
- 2 bay leaves
- 3 Tbsp. flour
- 6 Tbsp. cornmeal
- 2 lb. lean beef, coarsely ground
- 1 qt. water
- 8 chili peppers
- 3 tsp. salt
- 1 tsp. pepper
- In a large kettle, fry meat in oil until dark brown.
- Then add 1-quart of water. Cover and simmer two hours.
- Add remaining ingredients, except flour and cornmeal.
- Cook at gentle simmer for 30 minutes, removing bay leaves after 15 minutes.
- Make a paste of flour, cornmeal and water.
- Stir into mixture, cooking another five minutes at simmer while stirring often.
- Serve immediately with a fire extinguisher at your right elbow.
