  1. In a large kettle, fry meat in oil until dark brown.
  2. Then add 1-quart of water. Cover and simmer two hours.
  3. Add remaining ingredients, except flour and cornmeal.
  4. Cook at gentle simmer for 30 minutes, removing bay leaves after 15 minutes.
  5. Make a paste of flour, cornmeal and water.
  6. Stir into mixture, cooking another five minutes at simmer while stirring often.
  7. Serve immediately with a fire extinguisher at your right elbow.
