Macaroni And Cheese(Healthy Heart)
- 1 1/2 Tbsp. margarine
- 1/4 c. plain flour
- 3/4 tsp. dry mustard
- 1/8 tsp. ground red pepper
- 3 c. skim milk
- 1 1/2 c. grated Alpine Lace Cheddar cheese, divided
- 1/2 c. low-fat Swiss or Mozzarella cheese
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 5 c. cooked elbow macaroni
- vegetable spray
- In a 13 x 9 x 2-inch baking dish sprayed with vegetable spray, layer macaroni and cheeses, topping with cheese.
- In a small bowl, mix melted margarine, flour, mustard, red and black pepper, salt and skim milk.
- Blend and pour over macaroni and cheese mixture. Bake, covered, in a 350u0b0 oven and bake until cheese on top begins to brown.
- Serves 8.
