Broccoli And Ham Casserole
- 1 (10 oz.) pkg. frozen broccoli
- 3 1/2 Tbsp. butter or oleo
- 1 1/2 Tbsp. flour
- 1/2 tsp. salt
- 1 1/2 c.milk
- 2 c. chopped cooked ham
- 2 Tbsp. chopped green pepper
- 2 hard-boiled eggs, chopped
- 1/4 c. grated cheese
- 1 tsp. chopped onion
- 4 tsp. lemon juice
- 1/2 c. bread crumbs
- Cook broccoli according to package directions.
- Drain.
- Chop into 1 1/2-inch pieces.
- Melt 1 1/2 tablespoons butter in a saucepan.
- Add flour and salt; cook 1 minute.
- Add milk.
- Cook, stirring constantly, until thickened.
- Place broccoli in a 1 1/2-quart buttered casserole.
- Combine remaining ingredients except the bread crumbs.
- Pour over broccoli.
- Pour white sauce over all.
- Combine 2 tablespoons melted butter with bread crumbs. Put crumbs on top.
- Bake at 350u0b0 for 20 minutes or until bubbly. Green beans or asparagus may be substituted for broccoli.
