Salmon Or Tuna Almondine
- 2 envelopes Knox unflavored gelatin
- 1/2 c. cold water
- 1 c. boiling water
- 2 8 oz. pkg. cream cheese softened
- 2 Tbsp. lemon juice
- 1 Tbsp. curry powder
- 1/2 - 1 tsp. salt
- 1/4 tsp. garlic powder
- 1/3 c. green onionthopped
- 1 7 oz. tin tuna or salmon drained and flaked
- 1/2 c. sliced almonds - lightly toasted
- 1/3 c. sliced almonds - lightly toasted (used for garnish)
- In large bowl, sprinkle gelatin over cold water and let stand for 1 minute.
- Add boiling water and stir until gelatin is completely dissolved.
- With a wire whip or electric beater, blend in the cream cheese until smooth.
- Stir in lemon juice, curry powder, salt and pepper.
- Fold in green onion, pimientos, tuna or salmon and 1/2 c. almonds.turn into a 5 1/2 c. mold or bowl and chill until firm.
- To serve unmold onto a platter, garnish with almonds, overlapping the slices to form scales and if desired garnish with green olives sliced or parsley.
