Sweet-Sour Red Cabbage

  1. Remove outside leaves and wash cabbage.
  2. Shred to measure 5 cups.
  3. In saucepan, heat 1/2-inch salted water and 2 tablespoons vinegar to boiling.
  4. Add cabbage.
  5. Cover and heat to boiling; cook about 5 minutes.
  6. Drain.
  7. Fry bacon; drain.
  8. Pour off all but 1 tablespoon drippings.
  9. Stir brown sugar and flour into drippings in skillet.
  10. Add water, 1/4 cup vinegar, salt, pepper and onion. Cook, stirring frequently, until thick, about 5 minutes.
  11. Add bacon and sauce to cabbage and heat through.
  12. Makes 6 servings.
