Ginger Noodle Salad
- 4 ounces spaghetti or 4 ounces capellini
- DRESSING
- 1 tablespoon ginger, minced
- 3 tablespoons splenda no calorie artificial sweetener
- 1 tablespoon ketchup
- 1/2 cup light soy sauce
- 1/4 teaspoon chili paste
- 1 tablespoon water
- 2 tablespoons lime juice, fresh
- 1 teaspoon sesame oil or 1 teaspoon canola oil
- 2 cups mixed salad greens
- Cook pasta according to directions.
- In a medium saucepan add ginger, Splenda, ketchup, soy sauce, chilie paste and water.
- Simmer on medium-low for 1 minute.
- Remove from heat; add lime juice and sesame (or canola) oil, mix well.
- Add noodles and stir well.
- Place greens on a plate and noodles on top.
- *Serve immediately for a warm salad; chill noodles for 15-20 minutes for a cold salad*.
