7-Layer Southwestern Dip
- 3 c. shredded lettuce
- 1 (15 oz.) can black beans, drained
- 1/2 c. chopped red and yellow sweet peppers
- 1/4 c. green onion
- 1 (18 oz.) carton sour cream
- 2 finely chopped jalapenos
- 1 (18 oz.) jar chunky salsa
- 1/2 medium avocado, peeled and chopped
- 2/3 c. shredded Monterey Jack cheese
- 1/3 c. pitted ripe olives
- Line in a 12-inch platter with the lettuce.
- Stir together the beans, sweet peppers and onions; spoon atop lettuce, leaving a lettuce border.
- Dollop with sour cream; spread gently over bean mixture into a smooth layer.
- Sprinkle with jalapenos and 1/3 cup of lime peel, if desired.
- Drain excess liquid from salsa and stir in avocado.
- Spoon atop of sour cream layer.
- Sprinkle with cheese.
- Top with a layer of chopped olives.
- Serve with chips.
