7-Layer Southwestern Dip

  1. Line in a 12-inch platter with the lettuce.
  2. Stir together the beans, sweet peppers and onions; spoon atop lettuce, leaving a lettuce border.
  3. Dollop with sour cream; spread gently over bean mixture into a smooth layer.
  4. Sprinkle with jalapenos and 1/3 cup of lime peel, if desired.
  5. Drain excess liquid from salsa and stir in avocado.
  6. Spoon atop of sour cream layer.
  7. Sprinkle with cheese.
  8. Top with a layer of chopped olives.
  9. Serve with chips.
