Mac-Reuben Hot Dish
- 1 (7 oz.) pkg. macaroni (2 c. uncooked; 1/2 the noodles are enough)
- 2 (6 3/4 oz.) cans chunk ham or diced corned beef
- 1 (16 oz.) can sauerkraut, drained
- 3 c. milk
- 3 Tbsp. Dijon mustard
- 1 c. diced, buttered rye bread
- 1 (4 oz.) can chopped pimiento, drained
- 1/2 c. sliced green onion
- 4 Tbsp. butter
- 4 Tbsp. flour
- 2 c. grated Swiss cheese
- 1/4 tsp. pepper
- Prepare noodles; drain.
- Combine cooked macaroni, ham, pimiento and green onions.
- In medium saucepan, melt butter; stir in flour.
- Gradually stir in milk.
- Cook and stir until slightly thickened.
- Remove from heat.
- Stir in cheese, mustard and pepper. Combine cheese sauce with macaroni mixture.
- Put half in 3-quart baking dish; layer with sauerkraut and top with remaining macaroni.
- Garnish with diced rye bread.
- Bake at 350u0b0 for 30 minutes.
