Sliced Baked Potatoes

  1. Peel potatoes if the skin is tough, otherwise just rinse and pat dry.
  2. Cut potatoes into thin slices but not all the way through.
  3. Use a handle of a wooden spoon to prevent knife from cutting all the way.
  4. Place potatoes in a 9-inch microwave dish or pan.
  5. Sprinkle with melted butter and chopped parsley, chives or sage.
  6. Microwave at High power for 10 minutes, rearranging the potatoes after 5 minutes.
  7. Let rest for 5 minutes.
  8. Sprinkle with grated cheese and Parmesan cheese.
  9. Microwave for another 4 to 6 minutes at High power until cheeses are melted and potatoes are soft.
  10. Sprinkle with salt.
  11. Makes 4 servings.
