Buttery Crunch Topped Tomatoes
- 2 Tbsp. butter or margarine, melted
- 1/3 c. coarsely crushed buttery crackers
- 1/2 c. shredded Cheddar cheese
- 1 Tbsp. chopped fresh parsley
- 2 Tbsp. butter or margarine
- 1/2 tsp. caraway seed
- 1/4 tsp. salt
- pinch of pepper
- 1 Tbsp. chopped onion
- 2 large ripe tomatoes, each cut into 10 wedges
- In small bowl stir together 2 tablespoons melted butter, crushed crackers, cheese and parsley.
- Set aside.
- In 10-inch skillet melt 2 tablespoons butter.
- Stir in caraway seed, salt, pepper and onion.
- Add tomatoes.
- Cover.
- Cook over medium heat, stirring occasionally until tomatoes are heated through (2 to 3 minutes).
- Sprinkle with cheese mixture.
- Cover; let stand 1 minute.
- Serve immediately.
