Baked Cheesecake
- 2 c. graham crackers
- 1/2 c. sugar
- 1 1/2 tsp. cinnamon
- 1/2 c. melted butter
- 4 eggs
- 1 c. sugar
- 1/2 Tbsp. lemon juice
- 2 Tbsp. lemon rind, grated
- 1/2 tsp. salt
- 1 c. light cream
- 3 c. dry cottage cheese (Ricotta)
- 1/4 c. flour
- Heat oven to 350u0b0.
- Combine crumb with next 3 ingredients. Reserve 3/4 cup with spoon.
- Press the rest to bottom and sides of 9-inch spring-form.
- Beat eggs light, slowly beat in 1 cup sugar. Add next 5 ingredients and beat with hand or beater until blended.
- Sieve.
- Stir in lemon rind.
- Pour into pan.
- Sprinkle with reserved crumbs.
- Bake at 350u0b0
- for 1 hour.
- Turn off heat, open oven door.
- Cool cake in oven for 1 hour.
- Don't fret, it will settle.
- Chill.
- Remove pan sides.
- Makes 10 to 12 servings.
