Vegetable Pie

  1. Heat oven to 400u0b0.
  2. Lightly grease pie plate, 10 x 1 1/2-inches.
  3. Heat 1-inch salted water (1/2 teaspoon salt to 1 cup water) to boiling.
  4. Cook until almost tender, about 5 minutes; drain thoroughly.
  5. Mix broccoli, onion, green pepper and cheese in pie plate.
  6. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater.
  7. Pour into pie plate.
  8. Bake until golden brown and knife inserted halfway between center and edge comes out clean, 35 to 40 minutes.
  9. Let stand 5 minutes before cutting.
  10. Refrigerate any remaining pie. Serves 6.
