Cheesy Lasagne Roll-Ups
- 2 tsp. margarine
- 1/4 c. flour
- 1 c. chicken broth
- 1 c. skim milk
- 1/2 tsp. basil
- 1/3 c. nonfat Parmesan
- 1 c. diced turkey ham
- 8 cooked lasagne noodles
- 1/2 c. chopped onion
- 1 1/2 c. shredded zucchini
- 1 c. shredded carrots
- 1 c. nonfat cottage cheese
- 1/2 c. shredded Mozzarella
- 2 egg whites
- Heat margarine in saucepan.
- Whisk in flour.
- Gradually stir in broth, milk and basil.
- Cook and stir until thickened.
- Boil and stir 1 minute.
- Stir in Parmesan and ham.
- Steam onion until tender.
- Mix onion, zucchini, carrot, cottage cheese, Mozzarella and egg whites.
- Spread 1/4 cup of this mixture over each noodle. Roll up firmly.
- Spread 1 cup sauce in 11 x 7-inch baking dish. Arrange rolls, seam side down, in dish.
- Cover with sauce.
- Cover with aluminum foil.
- Bake at 375u0b0 for 20 minutes.
- Uncover and bake 10 to 20 minutes more.
- Let stand 5 minutes before serving.
