Curried Beef With Peas
- 2 Tbsp. butter
- 1 c. chopped fresh mushrooms
- 1 1/2 lb. ground beef, round or chuck
- 1 1/2 tsp. salt
- black pepper to taste
- 2 tsp. curry powder
- 1 Tbsp. coriander
- 1/4 tsp. crushed red pepper flakes
- 1 can tomato puree
- 1 (10 oz.) pkg. frozen green peas
- Melt the butter in a skillet and add the mushrooms. Cook, stirring, until mushrooms are golden. Add the meat, salt, pepper, curry powder, coriander and pepper flakes. Break up the meat with a wooden spoon and stir all ingredients together in the skillet. Cook for 10 minutes. Add the tomato puree. Simmer, covered, for 20 minutes. Add the peas. Cover again and simmer until peas are tender, 5 to 10 minutes. Serve with rice. Yields: Four to six servings.
