Chocolate Truffles

  1. In heavy 2-quart saucepan, combine Baker's chocolate, butter or margarine and 3 tablespoons of whipping cream.
  2. Cook over low heat, stirring constantly, until chocolate is melted (about 10 minutes).
  3. Remove saucepan from heat and gradually stir about 1/2 of the hot mixture into beaten egg yolk.
  4. Return egg mixture to saucepan.
  5. Cook over medium heat, stirring constantly, until slightly thickened (about 2 minutes).
  6. Remove saucepan from heat; stir in 3 tablespoons whipping cream.
  7. Pour mixture into small bowl and chill about 1 hour, until mixture is completely cool and smooth, stirring occasionally.
