Chocolate Truffles
- 6 bars Baker's semi-sweet chocolate, coarsely chopped
- 1/4 c. butter or margarine
- 6 Tbsp. whipping cream
- 1 egg yolk, beaten
- 1 (12 oz.) pkg. chocolate morsels
- 1/2 bar paraffin wax
- In heavy 2-quart saucepan, combine Baker's chocolate, butter or margarine and 3 tablespoons of whipping cream.
- Cook over low heat, stirring constantly, until chocolate is melted (about 10 minutes).
- Remove saucepan from heat and gradually stir about 1/2 of the hot mixture into beaten egg yolk.
- Return egg mixture to saucepan.
- Cook over medium heat, stirring constantly, until slightly thickened (about 2 minutes).
- Remove saucepan from heat; stir in 3 tablespoons whipping cream.
- Pour mixture into small bowl and chill about 1 hour, until mixture is completely cool and smooth, stirring occasionally.
