Fresh Peaches And Pears Bread
- 3 c. flour
- 2 tsp. apple pie spice
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 c. peeled pears, chopped
- 2 c. peeled peaches, chopped
- 1 c. granulated sugar
- 1 c. brown sugar, packed
- 3 eggs, beaten
- 2 tsp. brandy extract
- 1 c. canola oil
- 1 c. hazelnuts, chopped or 1 c. dates, chopped (optional)
- Sift dry ingredients together in a small bowl.
- Add nuts or dates.
- In a larger bowl mix together sugars, peaches, pears, eggs, extract and oil.
- Fold dry ingredients into fruit mixture. Spray and flour three 8 x 3 7/8 x 2 3/8-inch pans.
- Bake for 1 hour at 350u0b0.
- Test for doneness. Let cool in pans 1 hour before cutting.
