Cranberry Salad
- 1 medium naval orange
- 1 c. fresh cranberries
- 2 medium apples, pared and chopped
- 1/2 c. sugar
- 2 pkg. cherry flavored gelatin
- 1/2 c. walnuts, finely chopped
- 1 c. celery, finely chopped
- salad greens
- Peel orange, remove white membrane.
- Chop rind and pulp fine. Chop or grind cranberries.
- Combine apples, oranges and cranberries and drain well, reserving the juice.
- Pour juice in measuring cup and add enough water to make two cups.
- Heat one cup juice and sugar in a small saucepan, stirring until sugar is dissolved.
- Pour over gelatin in bowl, stir until gelatin is dissolved.
- Stir in remaining juice and cool thoroughly.
- Add drained fruits, nuts and celery.
- Pour into mold and chill until firm.
- Unmold on lettuce greens with pink gelatin cubes and pink mayonnaise.
