Chocolate Roll
- 5 eggs, separated
- 1 1/4 c. 10x sugar (powdered sugar)
- 1/4 tsp. salt
- 1/4 c. cocoa
- 1 1/2 c. sweetened heavy cream, whipped
- strawberries or favorite fruit
- Preheat oven to 350u0b0.
- Butter 10 1/2 x 15 1/2-inch jelly roll pan; line with wax paper.
- Grease and lightly flour paper.
- Beat yolks until thick (set aside).
- Sift sugar and cocoa together. Beat egg whites until foamy.
- Add salt; beat until egg whites form stiff peaks and fold sugar and egg whites into cocoa.
- Fold 1/3 egg white mixture into yolks.
- Fold in rest of egg white mixture. Spread evenly into pan.
- Bake 20 minutes.
- Turn cake onto clean kitchen towel; roll with towel and let set a few minutes.
- Unroll; let set and re-roll and let cool.
- Unroll; spread with sweetened whipped cream.
- Roll up again without towel.
- Dust top with powdered sugar.
- Add strawberries or favorite fruit.
- Refrigerate until ready to serve.
