Chocolate Roll

  1. Preheat oven to 350u0b0.
  2. Butter 10 1/2 x 15 1/2-inch jelly roll pan; line with wax paper.
  3. Grease and lightly flour paper.
  4. Beat yolks until thick (set aside).
  5. Sift sugar and cocoa together. Beat egg whites until foamy.
  6. Add salt; beat until egg whites form stiff peaks and fold sugar and egg whites into cocoa.
  7. Fold 1/3 egg white mixture into yolks.
  8. Fold in rest of egg white mixture. Spread evenly into pan.
  9. Bake 20 minutes.
  10. Turn cake onto clean kitchen towel; roll with towel and let set a few minutes.
  11. Unroll; let set and re-roll and let cool.
  12. Unroll; spread with sweetened whipped cream.
  13. Roll up again without towel.
  14. Dust top with powdered sugar.
  15. Add strawberries or favorite fruit.
  16. Refrigerate until ready to serve.
