Mediterranean Chicken And Penne

  1. Liberally spray large nonstick skillet with cooking spray. Add oil and heat over medium heat.
  2. Add garlic and onions.
  3. Heat until soft (approximately 3-4 minutes).
  4. Fill large saucepan with 2 inches of water.
  5. Place chicken breast in steaming basket or stainless steal saucepan with lid.
  6. Bring water to boil and steam chicken for 7 minutes.
  7. Remove from heat and let set in steam until fully cooked.
  8. Remove chicken from basket and let cool. When cool, cut into 1 inch chunks.
  9. Meanwhile, cook penne according to packaging.
  10. Drain and keep warm.
  11. Add chicken chunks, olives, basil, and oregano to skillet with onions.
  12. Turn to medium heat for 5 minutes.
  13. In large bowl, toss chicken with hot penne pasta.
  14. Sprinkle top with cheese and serve.
