Graham Cracker Preserves Cake
- 1 lb. graham crackers, crushed
- 1 small can crushed pineapple
- 1 c. nuts, chopped
- 6 eggs
- 1 stick butter or margarine
- 2 c. sugar
- 1 c. milk
- 2 tsp. baking powder
- 1/2 box raisins
- 1/2 c. dates, chopped fine
- 1/2 c. watermelon rind preserves or candied citron
- 1/2 c. pear or peach preserves
- 1/2 c. cherry preserves
- Cream sugar and butter.
- Crush graham crackers and mix with milk.
- Separate eggs.
- Add egg yolks, then nuts, raisins, dates, crushed pineapple and preserves.
- Add baking powder.
- Fold in beaten egg whites.
- Pour into tube pan or 9 x 13-inch pan and cook in moderate to slow oven for 1 hour and 15 minutes.
