Fiesta Casserole
- 31-oz. can refried beans
- 1 lb. ground beef
- 1 pkg. taco seasoning mix
- 1 can nacho cheese soup
- 1 c. shredded cheese
- Round tortilla chips
- 1 c. sour cream
- 1 small can ripe olives
- green onions, chopped
- Spread refried beans evenly over bottom of 2 quart, lightly greased shallow casserole dish.
- Cook ground beef; drain and stir in taco seasoning mix.
- Spread over beans.
- Spread the soup over the meat and sprinkle the cheese over top.
- Bake at 350 degrees for about 20 minutes.
- This can also be heated in a microwave at medium power just until cheese melts.
- Remove oven and garnish top with sour cream, olives and green onions.
- Stand the tortilla chips around the edge of the dish and serve.
