Fried Noodles(Makes 6 Servings)
- 2 chicken breast halves, skinned, boned and thinly sliced
- 1 Tbsp. soy sauce
- 2 tsp. cornstarch
- 1 pkg. (1 lb.) fresh egg noodles
- 2 Tbsp. vegetable oil
- 1 tsp. minced garlic
- 1 red bell pepper, seeded and cut into matchstick pieces
- 2 green onions (including top), cut into 2 inch slivers
- 3 Tbsp. soy sauce
- 1 Tbsp. Chinese wine or dry sherry
- 2 Tbsp. sweet brown bean sauce
- 2 Tbsp. vinegar
- 4 tsp. sesame oil
- Marinate chicken breast halves in soy sauce and cornstarch for 30 minutes.
- Cook noodles in boiling water until tender but firm to bite.
- Drain well.
- (Tip:
- If not fried immediately, toss with 2 teaspoons sesame oil.)
- Coat pan with vegetable oil over high heat.
- Add vegetable oil; swirl to coat sides.
- Add garlic; stir until fragrant, about 5 seconds.
- Add chicken and stir-fry for 2 minutes or until opaque.
- Add bell pepper and green onions and cook for 1 minute.
- Stir in soy sauce, wine, brown bean sauce, vinegar, sesame oil and noodles.
- Cook and gently toss until heated through.
- Serve hot.
