Hazel'S Lasagna
- 1/4 c. butter or margarine
- 1 c. fine chopped onion
- 1 large clove garlic, minced
- 1 lb. ground beef
- 1 1/2 c. (12 oz.) tomato paste
- 5 c. tomatoes (2 large cans)
- 1/4 tsp. pepper
- 1/2 tsp. dried basil, crumbled
- 1/2 tsp. oregano, crumbled
- 8 oz. lasagna
- 1 lb. Ricotta or cottage cheese (I use both)
- 12 oz. Swiss cheese
- 2/3 c. grated Parmesan
- 2 tsp. salt
- Melt butter or margarine in large skillet or Dutch oven.
- Add onion and garlic and cook gently about 5 minutes.
- Add ground beef.
- Cook slowly, stirring frequently, until all red color disappears from meat.
- Stir in tomato paste, tomatoes, salt, pepper, basil and oregano.
- Simmer, stirring occasionally, 30 to 35 minutes.
