Ham-Vegetable Fettucini
- 1 1/2 lb. cubed, smoked ham
- 2 peeled, chopped carrots
- 1 chopped, medium onion
- 8 oz. shredded Colby cheese
- 8 oz. shredded Monterey Jack cheese
- 1 pkg. fettucini noodles
- 1 head broccoli
- 1 head cauliflower
- 1/2 c. milk
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1 tsp. salt
- In a large pot, boil carrots, chopped broccoli and chopped cauliflower in water; boil until tender-crisp.
- In saucepan, combine ham, onion, milk and cheeses.
- Simmer until cheeses are melted.
- If too thick, add additional milk.
- Drain vegetables and place in mixing bowl.
- Use large pot to boil 3 quarts of water and cook noodles 7 to 8 minutes.
- Drain.
- Add to mixing bowl; cover with meat mixture and stir thoroughly.
- Serve.
