Smoked Sausage With Black-Eyed Peas
- 16 oz. dried black-eyed peas
- 1/2 lb. salt pork
- 3 c. chopped onions
- 1 bunch green onions
- 1 c. parsley
- 2 cloves garlic
- 1 to 1 1/2 tsp. salt
- 1 tsp. red pepper
- 3 dashes hot sauce
- 1 Tbsp. Worcestershire sauce
- 8 oz. tomato sauce
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- 2 lb. smoked sausage, cut into 1-inch pieces
- Soak peas overnight.
- Add salt pork to peas; cover with water and cook over low heat for 45 minutes.
- Add the next 13 ingredients.
- Cover and cook over low heat for 45 minutes.
- Add sausage.
- Cook over low heat for 45 minutes.
- Serve over rice. Great with French bread and salad.
