Smoked Sausage With Black-Eyed Peas

  1. Soak peas overnight.
  2. Add salt pork to peas; cover with water and cook over low heat for 45 minutes.
  3. Add the next 13 ingredients.
  4. Cover and cook over low heat for 45 minutes.
  5. Add sausage.
  6. Cook over low heat for 45 minutes.
  7. Serve over rice. Great with French bread and salad.
