Glazed Sweet Potatoes With Pears
- 4 to 5 sweet potatoes (1 1/2 lb. peeled), cut into 1-inch pieces
- 1 Tbsp. Heritage butter
- 1/2 c. orange juice
- 2 large pears cut crosswise into 1/2-inch slices
- 1/4 c. chopped walnuts
- 1/4 c. water
- 2 Tbsp. maple syrup
- 1 Tbsp. cornstarch
- 1/2 tsp. ground cinnamon
- In a 2-quart microwaveproof casserole, combine sweet potatoes, margarine or butter, and 1/4 cup of the orange juice.
- Cover and microwave on High for 6 minutes.
- Stir mixture; cover and microwave on High for 4 to 6 minutes or until crisp and tender. Add pears; cover and microwave on High 2 to 4 minutes or until fruit is tender but holds it's shape.
- Stir in the walnuts; cover and let stand.
- In a 1 cup glass measure, combine the water, maple syrup, cornstarch, cinnamon and remaining 1/4 cup of orange juice. Stir and microwave on High for 1 to 2 minutes or until the mixture comes to a boil and thickens.
- Pour over sweet potato and pear mixture and toss gently to coat.
- Makes 6 servings.
