Glazed Sweet Potatoes With Pears

  1. In a 2-quart microwaveproof casserole, combine sweet potatoes, margarine or butter, and 1/4 cup of the orange juice.
  2. Cover and microwave on High for 6 minutes.
  3. Stir mixture; cover and microwave on High for 4 to 6 minutes or until crisp and tender. Add pears; cover and microwave on High 2 to 4 minutes or until fruit is tender but holds it's shape.
  4. Stir in the walnuts; cover and let stand.
  5. In a 1 cup glass measure, combine the water, maple syrup, cornstarch, cinnamon and remaining 1/4 cup of orange juice. Stir and microwave on High for 1 to 2 minutes or until the mixture comes to a boil and thickens.
  6. Pour over sweet potato and pear mixture and toss gently to coat.
  7. Makes 6 servings.
