Monmouth County Chicken Pot Pie
- 2 c. cooked chicken, diced
- 2 c. cooked ham, diced
- 1/4 c. butter or margarine, melted
- 1/4 c. sifted flour
- 3/4 c. chicken broth
- 1 c. light cream
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 c. chopped onion
- 2/3 c. sliced mushrooms
- 1/4 c. cooking sherry
- Jersey sweet potato biscuits
- Place chicken and ham in 2-quart casserole.
- Combine butter or margarine and flour; stir until smooth.
- Slowly stir in broth and cream.
- Cook (200u0b0), stirring constantly until thickened.
- Add salt, pepper, onion, mushrooms and sherry.
- Pour over chicken and ham.
- Drop sweet potato biscuit dough by tablespoons around edge of hot mixture.
- Bake at 350u0b0 for 45 minutes.
- Serves 8.
