Cajun 15 Bean Soup

  1. In a large pan or kettle, cover beans with water and add 2 tablespoons salt.
  2. Soak overnight.
  3. In the morning, bring to boil and then drain.
  4. Add 2-quarts water.
  5. Bring to boil.
  6. Simmer slowly 2 1/2 hours to 3 hours.
  7. May be cooked in crock-pot.
  8. In a skillet, saute onion, garlic and sausage until sausage is brown. Drain off excess grease; add contents to bean pot with stewed tomatoes, lemon juice and flavor package.
  9. Simmer for 10 minutes. Serves 12 to 14.
  10. Great as a leftover next day.
  11. Also freezes very well.
