Marinated Pork
- 1/4 c. minced fresh spearmint
- 1 Tbsp. peeled, grated ginger root
- 2 cloves garlic, minced
- 1/3 c. molasses
- 3 Tbsp. soy sauce
- 3 Tbsp. hoisin sauce
- 2 Tbsp. water
- 2 (1 lb.) pork tenderloins (trim fat)
- Combine first 7 ingredients in a small bowl and stir well. Place tenderloins in large flat nonmetal dish.
- Pour mixture over tenderloins, turning to coat.
- Cover and marinate in refrigerator at least 8 hours, turning occasionally.
- Remove tenderloins, reserving marinade.
- Coat grill rack with cooking spray.
- Place on grill over medium-hot grill.
- Insert a meat thermometer to thickest part.
- Cook 20 minutes on each side or until thermometer registers 160u0b0.
- Baste often with marinade.
- Great served with wild rice.
