Nancy'S Ham Loaf (Using Lots Of Ham)
- 2 lbs ground ham (may be done in food processor)
- 1 lb ground pork
- 2 eggs
- 3/4 cup homogenized milk
- 1/2 cup condensed tomato soup
- 3/4 cup breadcrumbs (3 slices of bread with no crusts)
- Sauce
- 1/2 cup condensed tomato soup
- 1 teaspoon dry mustard
- 3/4 cup brown sugar, lightly packed
- 1/3 cup vinegar
- 2 tablespoons butter
- Preheat oven to 350 degrees F. Have ready 2 8-x4-inch loaf pans.
- Mix all ingredients (except sauce ingredients) together. Divide among loaf pans. (It may also be made in a 9- x 13-inch pan.).
- Bake 1 hour in preheated oven. Remove from oven and pour the sauce over the tops of the loaves. Return to oven and continue baking 1/2 hour longer.
- To make sauce: Combine sauce ingredients in a saucepan and bring to a boil, stirring to make sure everything is combined well and sugar is melted.
