Fresh Florida Corn Chowder

  1. Cut kernels from cobs; set aside.
  2. In large pan, melt butter over medium heat.
  3. Saute onion and celery for about 3 minutes or until tender-crisp.
  4. Stir in flour; cook and stir for 1 minute. Slowly stir in milk, salt and pepper.
  5. Bring to the boiling point, stirring constantly, until mixture thickens slightly.
  6. Stir in corn and simmer, covered, for 5 minutes.
  7. Stir in cheese; heat until cheese melts.
  8. Serve at once in bowls and sprinkle with paprika.
