Fresh Florida Corn Chowder
- 3 c. fresh Florida corn, 6 ears (canned corn can be used)
- 4 Tbsp. butter
- 1/2 c. chopped celery
- 1 qt. milk
- 1/4 tsp. white or black pepper
- 2 c. mild Cheddar cheese, shredded
- paprika
- 1/2 c. chopped onion
- 3 Tbsp. flour
- 1 1/4 tsp. salt
- Cut kernels from cobs; set aside.
- In large pan, melt butter over medium heat.
- Saute onion and celery for about 3 minutes or until tender-crisp.
- Stir in flour; cook and stir for 1 minute. Slowly stir in milk, salt and pepper.
- Bring to the boiling point, stirring constantly, until mixture thickens slightly.
- Stir in corn and simmer, covered, for 5 minutes.
- Stir in cheese; heat until cheese melts.
- Serve at once in bowls and sprinkle with paprika.
