Easy Chicken Divan
- 1 (3 1/2 to 4 lb.) broiler-fryer, cut in half
- 2 (10 oz.) pkg. frozen broccoli spears, thawed and coarsely chopped
- 2 (10 3/4 oz.) cans cream of chicken mushroom soup (undiluted)
- 1 c. mayonnaise
- 1 1/2 tsp. lemon juice
- 3/4 tsp. curry powder
- 1/2 c. (2 oz.) shredded sharp Cheddar cheese
- 3/4 c. herb-seasoned stuffing mix
- Combine chicken and enough water to cover in a Dutch oven; bring to a boil.
- Cover; reduce heat and simmer 40 minutes or until tender.
- Remove chicken, reserving broth for other uses. Cool chicken.
- Skin, bone and cut chicken into bite size pieces. Set aside.
- Place broccoli in lightly greased 11 x 7 x 1 1/2-inch baking dish.
- Top with chicken.
- Combine soup and next 3 ingredients; pour over chicken.
- Sprinkle with cheese and stuffing mix.
- Bake at 400u0b0 for 25 to 30 minutes.
- Yield:
- 6 to 8 servings.
